The older I get, the more I appreciate having a few meals I can rely on.
Not because they’re exciting.
Because they’re easy.
My perfect day starts with knowing dinner is already figured out before I leave the house.
It’s a little like making the bed.
When I leave my bed unmade, I come home feeling behind.
When I don’t have a healthy meal planned, I feel exactly the same way.
So here are three things you’ll find on repeat in my kitchen:
🍲 Chicken Soup
My secret ingredient?
Fresh squeezed lemon and Parmesan.
The lemon brightens everything up, and the Parmesan adds that salty richness.
We prefer ours with peas or beans, and if we’re having noodles, I cook them separately and add them later.
Whenever possible, I use homemade bone broth.
When life gets busy, organic chicken broth from Costco gets the job done.
The best part?
Thirty minutes to prep, another thirty minutes to simmer while I walk Blue, and dinner is ready for days.
🍅 Tomato Bake
There are always tomatoes on my counter.
Cherry tomatoes.
Heirloom tomatoes.
Whatever looks good.
I love them even more when they’re in season.
Tomato feta bake with crusty bread might be one of my favourite meals.
Simple ingredients.
Minimal effort.
Maximum reward.
And one day, I’m going to Italy during tomato season just for the experience.
🍝 Pasta
As long as I have the sauce base ready, dinner takes no time at all.
Boil the pasta.
Add a splash of pasta water.
Mix it into the sauce.
Whether it’s shrimp, olive oil, garlic, or fresh tomatoes, it’s one of the easiest meals to pull together after a long day.
One glass of wine.
Dinner is served.
These aren’t fancy meals.
They’re just the meals that help me stay on track when life gets busy.
